Qué harás

On roasting days, you'll probably smell the chocolate before you get to our small factory. Either way, you'll see how we transform rare cacao beans into chocolate. Along the way you'll taste our cacao nibs, a chocolate from a 16h century Spanish court recipe, several single-origin chocolates and bars made with Macambo/Jaguar, cacao's forgotten cousin.

If you're curious, you can learn about the types of equipment needed to make chocolate at home. I'll also give you recommendations for other food and chocolate-related places to visit.

I have been a professional chocolate maker for 5 years now, and my bars have already won numerous international awards. That journey started over a decade ago, when I discovered single origin chocolate and realized how much flavour complexity there exists in different chocolates. Today I source cacaos from South America, the Caribbean and Madagascar, occasionally travelling to find some with rare genetics and unique flavours.

The entire tasting tour will be at our small factory in Montreal's Mile-End neighbourhood. We recommend taking public transit (55 bus or metro to Laurier station, Laurier street exit) or walking and cycling, since parking in this popular area can be a headache.

It was my first time doing anything like this and I never thought I'd learn so much about chocolate. Daniel was an expert in his field and really showed his expertise and knowledge by not only demonstrating how he made his work, but also by letting us taste all of it. As a chocolate lover this was awesome. It was very insightful to see how the process was from start to finish. And I was genuinely surprised at how many different kinds of chocolate there were. I had an basic understanding that there was but Daniel certainly opened up my knowledge. The salted chocolate was my favorite!

It was really interesting to learn more about cocoa and what process is necessary to finally get chocolate out of it. You usually not think about how many different countries and kinds of different cacao beans there are and how difficult it is to process the beans correctly so that you get the perfect chocolate. Daniel will explain everything and I really appreciated learning more about my favourite sweets.

So insightful and interesting. Daniel’s genuine enthusiasm for chocolate is contagious. Wish we had done this tour at the beginning of our trip - Daniel was a wealth of info about places to go around Montreal! A definite “must do” - and walk around this neighborhood, too!

This was such a great experience. Definitely once in a lifetime, especially for someone who knew nothing about chocolate. If you find yourself in Montreal with some spare time, this is definitely a must do.
