Caunes-Minervois has an exceptional natural resource, due to a particular geological situation: the significant presence in its basement of various marbles, including the famous crimson marble veined with white. Appreciated by the Romans, used by medieval sculptors, the red marbles of Caunes were used for a time under the aegis of the monks of the Abbey, then saw their exploitation taken over by a sculptor from the Genoese riviera around 1615. Exchanges increased between Carrara (white marble) and Caunes while, the religious buildings of the south take advantage of this shimmering decor as columns or altarpiece elements. The most remarkable royal or imperial monuments from Louis XIV to Napoleon III, highlight the marble of Caunes: Fontainebleau, Versailles, Marly, the Louvre, the Invalides, the Carrousel, and the Opera House in Paris.
